Self-described as "a fermentorium, and an art project, and a traveling conceptual pop up taproom, and a brewery, and a lot less pretentious than it sounds," Ancillary* won't have a permanent location (yet...), but instead will rely on monthly pop-up events around town. At each event they'll drop a new beer, have a party or other unique experience, and maybe bring along some other surprises. Each event will also share proceeds with a different charity.
The founders—Sean Marlin McKinney, Whit Baker, Andy Schnitzer, and Topher Fulton, founders and employees at Bond Brothers—are using this as sort of a side project to play with more experimental stuff, as well as do some interesting collaborations. "This is our way of having fun, shaking things up and giving back to a community that has been extremely supportive over the years," shares McKinney.
The first release is called “Cat’s Out Of The Bag,” and is a a Juicy IPA with Citra and Mosaic. The cat-themed party will be held at the just-opened downtown bar Junction West on Sunday, October 7. After the party, their beers will be sold from select bottle shops around the Triangle and beyond, including:
