"In this class you will learn to make a traditional Clothbound Cheddar Cheese from start to finish as well as fresh Ricotta from the leftover whey. This workshop will review cheesemaking fundamentals learned in the basic class and apply them to the Cheddar cheese we will be creating. We'll delve deeper into the science of what makes good cheese including how to properly age the different types of cheese and how to store it efficiently.
